Paul Hletko

Paul Hletko is the founder of F.E.W. Spirits, a small but high-quality distillery based in Evanston, Illinois. He is not only an entrepreneur but also a passionate craft distiller who helped bring the art of distilling back to a town where alcohol was banned for almost a century. Paul grew up in a family that cared deeply about craftsmanship. His grandfather once owned a brewery in what is now the Czech Republic, but it was taken away by the Nazis during World War II. That history inspired Paul to build something meaningful of his own.

Before starting F.E.W. Spirits, Paul tried several careers. He worked as a lawyer, a guitar pedal designer, and even a music industry professional. But something was missing. In 2011, he decided to follow his passion and opened his own distillery. The name “F.E.W.” is not just a clever play on words—it stands for Francis Elizabeth Willard, a famous Evanston resident and leader of the temperance movement. Naming the distillery after her was a bold and ironic move, considering she fought to ban alcohol.

F.E.W. Spirits started small, focusing on whiskey, gin, and bourbon. Paul was determined to use only high-quality ingredients and old-fashioned techniques. Over time, the company grew in popularity, winning awards and gaining a loyal fan base. Paul believes in creating spirits that are both modern and rooted in tradition. His goal is to make something people enjoy while honoring the craft of distilling.

Outside of his work, Paul is known for his creative mind and strong opinions about the liquor industry. He often speaks at events and writes about the future of craft spirits. His journey from a family tragedy to a thriving distillery shows how history, passion, and innovation can come together in a powerful way.

Paul lives in Evanston with his wife, three kids, and two dogs. He credits his supportive partner for sticking alongside him through building the F.E.W. distillery and overturning 160 years of local prohibition history.
